Relation of the heat resistance of salmonellae to the water activity of the environment.
The effect of water activity (a(w)) on the heat resistance of eight strains of Salmonella was studied. Heat resistance of the organisms increased as the a(w) of the heating menstruum was reduced. Sucrose afforded the cells a greater degree of protection than did fructose, glycerol, and sorbitol. A direct correlation between a(w) and heat resistance could not be established over the range of a(w...
متن کاملIncreasing Ceftriaxone Resistance in Salmonellae, Taiwan
In Taiwan, despite a substantial decline of Salmonella enterica serotype Choleraesuis infections, strains resistant to ciprofloxacin and ceftriaxone persist. A self-transferable bla(CMY-2)-harboring IncI1 plasmid was identified in S. enterica serotypes Choleraesuis, Typhimurium, Agona, and Enteritidis and contributed to the overall increase of ceftriaxone resistance in salmonellae.
متن کاملConcentrated Heat Sources in the Heat Conducting Rod
The paper shall demonstrate how concentrated source terms can be included by Delta functions in models with distributed parameters and, moreover, that the abstraction of sharply concentrated quantities leads to decisive numeric advantages. The system of differential equations loses its stiffness here at the method of lines. The eigenvalues of the Jacobian matrix (A-matrix) show that it becomes ...
متن کاملThermal resistance of salmonellae and staphylococci in foods.
The heat-resistant Salmonella senftenberg 775W and two strains of Staphylococcus aureus were tested at temperatures up to 68.3 C (71.1 C for S. senftenberg) in four different media. From the survival data, decimal reduction times (D values) were calculated for each set of conditions, and decimal reduction time curves were constructed for each bacterial strain in each medium. Slopes of decimal r...
متن کاملHeat Treatment of Milk
The aim of this chapter is to communicate the underlying principles for producing heattreated milk which is safe and of high quality, based on many years of experience which has been gained from teaching, research and troubleshooting. Although a small amount of milk is still sold as ‘untreated’ or raw, the two main heat treatments used for milk sold in the retail sector are pasteurisation and s...
